Cherry Crumble Bars

Ingredients

  • ¾ cup unsalted butter, at room temperature
  • ½ cup granulated, super fine sugar
  • ½ cup all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ tsp salt
  • 2 cups fresh cherries, pitted and halved (or thawed, previously frozen cherries if fresh is not an option)
  • 1 tablespoon cornstarch (or arrowroot_
  • 1 tablespoon bourbon (or more if you’re boozy)
  • 2 teaspoons vanilla paste
  • Additional granulated, super fine sugar (or more based on sweet preference)

Instructions

Preheat oven to 375 degrees F. Line a square 8 or 9-inch baking pan with parchment paper. Butter the sides and bottom of lined pan. Set aside. In a medium mixing bowl, stir together cherries, cornstarch, bourbon, vanilla, and sugar. Play around with this. The cornstarch with thicken the juice especially if using frozen cherries. And, feel free to add sugar to increase to preferred level of sweetness. Remember, it’s best to start with less and gradually add sugar. In a large mixing bowl, cream together the butter and sugar. Add flour, baking soda, baking powder, and salt and mix with a fork until the mixture resembles wet sand. Reserve approximately ¾ cup of this mixture. Press remaining crumb mixture into the bottom of prepared pan. Spread cherry filling over the crust and sprinkle the remaining crumb mixture over cherries. If desired, sprinkle some sugar over crumb topping. Bake bars for 20 to 25 minutes just until the top is golden. Great served warm with a scoop of vanilla ice cream and also yummy after they bars had had time to solidify.
